Many cuisines use ingredients such as fried onions or garlic, sauted peanuts or cashews to add texture to dishes that otherwise are fairly mono-textured. Here is a Balinese recipe for Fried Shallots.
Used as a garnish in Balinese and other dishes, especially ones that require some texture.
|10 shallots||0.25 cup oil|
Peel and thinly slice the shallots. Dry on a paper towel. Heat the oil until moderately hot. Add shallots and fry until golden brown. Remove and drain thoroughly before storing in airtight jar.
In India it is also common to fry sliced onions until golden and crisp for use as a topping for rice dishes, especially biryani.
