Recipe: Fig Salad with Pecorino

Another gorgeous salad for Autumn days! It is also cross-posted it here on our sister site, A Life Time of Cooking. It first appeared here as part of our Retro Recipe series.

Figs, surprisingly, take acid very well, rocket too, so be generous with the lemon or lime juice.

The salad is fresh and inviting, and I have been known to have it for a Late Summer breakfast with a cup of coffee. Enjoy!

Ganga’s Fig Salad

Had some figs, had some left over pecorino – what else to do with them but throw them together in a salad? Glorious results.

1 bunch rocket 4 – 5 Tblspn good drizzle great olive oil sea salt and freshly ground black pepper
75 g finely grated fresh pecorino 6 ripe figs basil leaves
lemon or lime juice

Cut figs in half or quarters, depending on size. Lay the rocket leaves on a flat plate, in the centre. Lay on the figs, and drizzle the whole first with the olive oil and then with the lemon or lime juice. Season with black pepper and a little salt. Scatter with basil leaves and coarsely grated fresh pecorino cheese. Eat!
