This salsa would be good with BBQ grilled asparagus too.
I can eat this as a meal! It is that good.
|2 tomatoes, small diced||1/2 cup pine nuts, roasted||2 Tblspn chopped parsley|
|1.5 Tblspn extra virgin olive oil||1 Tblspn balsamic vinegar||2 – 3 bunches asparagus, trimmed|
|shaved parmesan to serve||sea salt and freshly ground black pepper|
Combine the diced tomato, roasted pine nuts and parsley with oil and vinegar. Season to taste and mix well.
Place asparagus on top of a steamer, cover and steam over boiling water for 1 – 2 minutes, or until just tender. Serve asparagus in the centre of a large white plate, topped with tomato mixture and shaved parmesan, with any juice from the tomato mixture drizzled around the stack of asparagus.
Sit in front of the teev and eat.
