Simple Chickpea Salad with Zucchini and Olives
|a tin of chickpeas, or a cup of cooked chickpeas||handful of parsley|
|6 – 8 black olives||1 diced zucchini or cucumber|
|dressing of garlic, balsamic vinegar, lemon juice and olive oil|
Toss all salad ingredients together. Make a dressing and add to the salad. Chill.
We make this often. This time, halved cumquats were added, as it was the season, and they add a delicious tang to the salad. A little less lemon juice is used if cumquats are added.
