Skinning Drained Chickpeas
To skin drained chickpeas after cooking, lay them out on a clean tablecloth, cover and rub with a circular motion to loosen the skins. Place the rubbed chickpeas in a bowl of cold water – the loose skins should rise to the top. Skim off the skins, drain the chickpeas and use.
