Tomato Paste

Home-made Tomato Paste

Sauté in a large pan 3 Tblspn olive oil 2 cups onion, chopped finely
4 – 6 cloves garlic, chopped finely 1 -2 red pepper, chopped finely
1 – 2 large carrots, chopped finely 2 – 3 stalks celery, chopped finely
When onions are clear and very soft, add: 1 kg fresh tomatoes, chopped
Simmer until thick, approx. 45 – 60 minutes. Sieving will only be necessary if the ingredients were not chopped sufficiently finely. Use, refrigerate or freeze in 1 – 2 Tblspn lots, to use in winter.

This is cross posted with our sister site, A Life Time of Cooking. It appears here as part of the Retro Recipes series – recipes from our first blog, 1995 – 2004.
