Recipe: Lemony Couscous

Very Lemony Couscous

Couscous is SO very easy, and so yummy.

3 lemons, or use 1 or 2 lemons and some preserved lemon, chopped 2 Tblspn virgin olive oil, cold pressed 1 packed cup couscous
1 cup vegetable stock 3 Tblspn chopped parsley or coriander 1 Dessertspoon butter
2 tspn lemon pepper, or use black pepper to taste salt

Couscous reheats very well in the microwave, and also can be served cold, so this can be made immediately before serving, or beforehand.

Grate the rind and squeeze the juice of the lemons. Bring the stock, olive oil and lemon juice to the boil. Remove from the heat and add the couscous. Leave to absorb the liquid for 5 minutes. Toss with a fork and stir in the butter, grated lemon rind, pepper, parsley and salt to taste.
