Cucumber is so cooling in those hot months. With tomato it is even better. This is gorgeous. Not quite gazpacho, it is similar. Best eaten chilled, it can have yoghurt stirred through.

Quick Cucumber and Tomato Cold Soup
Another cold soup for hot days.
|1 tin tomato soup (or some home made tomato soup, or even the juice from 4 – 6 tomatoes)||cucumber, lots, chopped finely||1 garlic clove, crushed|
|lemon juice||salt and pepper|
|1 Tblspn finely chopped red onion||A tiny bit of tamarind water (optional)|
|To garnish (optional)||roughly chopped coriander, parsley or basil||nasturtium flowers, petals separated (optional)|
Make 3 hours in advance.
Mix all together and chill in the refrigerator until ready to use. Chill in the refrigerator. Garnish with a dollop of yoghurt (optional), and sprinkle with coriander and nasturtium flowers. YUM!
