What is better than roast pumpkin? A Roast Pumpkin Salad! Use Butternut or Jap pumpkin if you can, or a flavourful pumpkin or squash that can be roasted. This is a gorgeous salad – just right for any time of year.

Fantastic and colourful salad.
|Caramelised Roast Pumpkin||Oven Dried Tomatoes or sun dried tomatoes||feta cheese, chopped into small squares|
|baby zucchini, chopped||carrot, sliced or chopped||green chilli, sliced finely|
Arrange chunks of pumpkin, slices of dried tomatoes, chopped zucchini, sliced carrot and a small amount of fresh chilli. Sprinkle over the feta cheese. Add the horseradish cream, and toss. Garnish with fresh herbs and serve.
