English Creamed Carrots

English Creamed Carrots

Just sometimes it is good to eat English food. Not too often, mind you 🙂

450 g carrots peeled and sliced 30 g butter 2 Tblspn brown sugar
30 ml cream 1 small onion, peeled and sliced salt and black pepper
2 Tblspns chopped parsley 1 Tblspn water

In a pan with a lid melt the butter with the water and then layer the carrots and onions in the pan. Cover and place over a low heat. Simmer very slowly until tender, about 20 minutes. Season and sprinkle over the sugar. Pour in the cream and continue to cook slowly for 10 minutes. Place in a serving dish and sprinkle with parsley.
