A simple salad that moderates the tang of raw onion yet keeps its zip. Perfect for BBQs or curries.

Great at a BBQ, and with curries too.
|5 white onions, peeled and sliced very thinly||1 – 2 Tblspns coriander seed||salt and freshly ground black pepper|
|6 Tblspn extra virgin olive oil|
Pour very hot – boiling water over the onions and let sit for 2 – 3 minutes. This removes the ‘bite’ of the onions without removing the raw onion taste. Crush the coriander seeds roughly in a mortar and pestle.
Drain the onions very well. Mix the onions with the crushed coriander seeds, salt, black pepper and olive oil. Cover and stand for 30 minutes.
