Cold Avocado Soup for Hot Weather | Heat in The Kitchen | Soup

I have a couple of Avocado Soups that I make in Hot Weather. This is one of them.

Avocado Soup

A cold soup for hot days.

2 avocados, very ripe (almost overripe) 4 cups stock 1 garlic clove, crushed
lemon juice 1 Tblspn sweet chilli sauce salt and pepper
1 Tblspn finely chopped red onion
To garnish (optional) roughly chopped coriander diced tomato
plain yoghurt

Make 3 hours in advance.

Mash the avocados to a pulp, add the stock, lemon juice, sweet chilli sauce, garlic, onion and salt and pepper. Chill in the refrigerator. Garnish with a dollop of yoghurt, and sprinkle with coriander and diced tomato. YUM!
